Eat Your Veg | Apple & Cinnamon Crisps

I’ve been on a bit of a mission lately to test out a few Healthier Snacks recipes, partly for a Healthier Lunchbox project at my local school and partly because I’ve been meaning to experiment with more fruit and veggie crisps for such long time now and this has provided me with the perfect excuse!. What’s good about homemade oven baked crisps is you have a total handle on the amount of sugar, salt or fat going in.

I recently made a couple of batches of very tasty Kale Crisps, and whilst I thought they were delish my kids weren’t quite so keen. I fear the blatant greenery was a bit off putting. But they did really like my latest two batches of Apple and Cinnamon and Parsnip Crisps (recipe for the latter shortly). The children at school, thankfully, gave a very favourable response too, though there were quite a few that didn’t like the cinnamon flavour. Please do omit if you’re not so keen yourself!.

Admittedly there is a little sugar added to these apple crisps but compared to most commercial sweet snacks it’s truly miniscule. A word of warning that these do take a couple of hours to bake and dry out but if you make in big batches, enough to fill your oven anyway, they do keep crispy for several days in an air tight container.

If you don’t like cinnamon just leave it out!

Special Equipment:

2 to 3 large baking trays lined with baking paper

Apple & Cinnamon Crisps

Ingredients Prep Time:10 mins, Cook Time: 2 hours, Total Time: 2 hrs 10 mins

3 sweet apples
1 teaspoon cinnamon
1 dessertspoon soft brown sugar

1) Preheat your oven to 110°c
2) In a large bowl combine the cinnamon and sugar
3) Core the apples with an apple corer, or if you don’t mind a little added crunch leave whole
4) Leaving the skins on (for extra fibre) slice the apples as finely as you can
5) Toss the sliced apples in the cinnamon and sugar mix
6) Lay the apple slices in single layers on the baking trays and place in the oven
7) Bake for 2 hours until totally dried out and crispy, turning about half way through
