It’s all been a bit snacktastic around here lately, well ’tis the season for it. Not only have I been experimenting with flavoured Popcorn but I’ve been roasting up pumpkin seeds with Gran Luchito Smoked Chili Honey and trialling Wonderful Pistachios and Almonds. Oh the chore.

img.phpFirstly the Pumpkin Seeds. It always seems such a waste to throw away these glorious seeds. For the last few years quite a few were squirreled away for growing in my garden the following spring. Probably too many as I ended up with nigh on 20 pumpkin plants the year before last!. But they also happen to be a really tasty treat briefly roasted in the oven, either just plain with a dash of rapeseed or olive oil and a mere pinch of salt and pepper. Or even better with a smidgeon of Gran Luchito Smoked Chili Honey too. And the chili really calms down on roasting so they’re also a great little healthy snack for the Little Folk.

Just incase you missed it I reviewed all three fabulous Gran Luchito smoked chili products recently, as well as roasting a ham in the honey (sublime). Fabulous products.

imagesAs for the Wonderful Almonds and Pistachios I was recently sent to try out.  Addictively moorish. All of them. And they didn’t long. I sampled the full range of pistachios, No Salt, Roasted Salted, Salt & Pepper and Sweet Chili. All impressively high quality nuts and a decent size, but my favourite flavour had to the Sweet Chili, very closely followed by the Salt & Pepper. Interesting, and annoyingly, my kids LOVED the Sweet Chili flavour too, despite my protestations that they’d be too ‘spiky’ for them (a Frannie & Jacqueism for spicy). Actually an abject lie so that I could demolish them myself. I’m not too sure I’ve ever had flavoured pistachios before but I certainly will be now, these truly are Wonderful. I was sent also sent a pack of Wonderful Natural Almonds which were again of the very highest quality and way, way too moorish. And make for a very healthy after-school snack.

Since it’s Christmas Party season I’m reckoning the Luchito Honey Pumpkin Seeds would go down a storm as a healthier nibble so I’m entering them the Christmas Party Food Four Seasons Food challenge, co-hosted by myself and this month by Anneli over at DelicieuxAnd also to Let’s Cook Christmas Party Food, hosted by Nanya over at Simply Food.

A small oven-proof roasting pan



Wonderful Nuts & Luchito Honey Roast Pumpkin Seeds

Ingredients Prep Time:5 mins, Cook Time: 5 mins, Total Time: 10 mins

a couple of handfuls of fresh or dried pumpkin seeds
a mere drizzle of olive or rapeseed oil
a drizzle of Gran Luchito smoked chili honey OR ordinary runny honey and a pinch of dried chili flakes
a pinch of salt and pepper

1) Preheat your oven to 200ºc/180ºfan/gas mark 6
2) Place all the ingredients on a small oven tray, stir around a little so evenly coated
3) Roast in the hot oven for 5 minutes, turning once or twice during this time (watch carefully as they do burn easily)
4) Cool for a few minutes on the tray before turning out into a serving dish

    These all sound very tasty Louisa. Love it that you still save pumpkin seeds, I’ve eaten so many from my monster Mother Hubbard squash this Autumn/Winter! This looks like a great way to use them. Hope you have a fab Christmas. x

      Luchito Honey is just fabulous isn’t it. Keep finding more uses for it. Flavouring Popcorn is my latest, but then it’s hard to beat on hot buttered toast!
