May’s Four Seasons Food MEGA Round-Up

A staggering thirty five entries to May’s ‘Celebrating Spring’ challenge, now that’s impressive. You really have been a very busy and creative lot haven’t you, making the most of the late spring bounty showcasing everything from rhubarb to strawberries, crab to lamb, peas, asparagus, salad leaves and fresh herbs. Not to mention the foragers delights created from the last of the wild garlic and nettle tops and towards the end of the month the elderflowers . A massive thank you to everyone who kindly took part.
As it’s been a bumper month I thought I’d simplify the round up and sum each recipe up in about six words. At least I’m going to attempt to, but sometimes this is trickier than my usual over-exhuberent wordiness!

I told you it was a mega one this month folks and I’m sure you’ve not been disappointed. So many tantalisingly tasty salads, sides, appetisers, mains, puds and cakes, a feast for any occasion. But unfortunately we can only have one winner and just for a change I thought I’d select one myself this month. The recipe that appealed to me the most and stood out as a dish I’d be jumping at the bit to make and devour has to be Elizabeth’s Kitchen’s Poached Egg with Spiced Lentils and Asparagus Kale, “gentiliy sautéed asparagus kale with coriander, cumin and ginger spiced puy lentils topped with a poached egg and paprika-spiked yogurt and Feta”. Oh yes please, I’m totally convinced I’ll be as equally hooked on it as Elizabeth. I was particularly interested to discover a whole new veggie to me too in the recipe, asparagus kale. I’m already on the lookout for some! Congrats Elizabeth, you shall shortly be placed in the Four Seasons Food Winner’s Gallery!
